  • 150 gr green beans with shells
  • 100 gr rock sugar
  • 1 tablespoon tapioca starch
  • 800 ml  filtered water
  • 20 gr tangerine peel (tran bi) with a spicy taste
  • 500 ml coconut milk

How to make Hoi An Green Bean Sweet Soup

  • Rinse the green beans, soak them in warm water for about 3 hours before cooking.
  • Put the green beans in a pot of water and boil over medium heat until the beans are soft.
  • Put 100gr rock sugar, 2 cups of filtered water (about 300ml filtered water) to a pot and boil until the sugar dissolves.
  • Next, pour the cooked sugar water into the pot of green beans and mix 1 tablespoon tapioca starch with 100ml filtered water and pour into the pot of sweet soup, let the mixture thicken, continue to cook for 2-3 minutes, then turn off the stove.
  • Add coconut milk and stir well for about a minute then turn off the stove.
